This...this is just Fall in a cookie pie form. Cinnamon cookie dough, with toffee bits and an inner layer of apples and then filled with more of my homemade apple filling with just a little caramel drizzle on top. I love a good apple pie, but when apple pie meets cookies....that's heaven in dessert form.
